In the first step of the wet process, the broken rice needs to soak around twelve hours under the influence of a suds solution and swell. This gives the endosperm a more elastic structure and can be split in the first place. Disintegration takes place in mills, and breaks the endosperm on so that the separable components are present in a suspension.
In the following extraction step all major plant fibers are separated from the suspension so that the suspension contains only the starch particles, fine fibers and protein residues. After these crude starch milk has been freed of coarse impurities, followed by a 3-stage starch concentration and leaching with 3-phase nozzle separators which separate the flow in pure starch milk, fine fibers and a protein solution.
